  • Oh the fun of the city...

I dont know if yall have realized yet or not but I am not a city girl. I have never lived in/near a city. Its always been country or rural places for me. So, here I have to drive a minimum of two hours for anything other than movies and food. Boondocks Arizona. Fun. Well I needed to go for the infamous back to school shopping. I was in some desperate need for new jeans. I mean, I was stuck to about two or three pairs of jeans that were not too big on me. So, I made my two hour trip to Tucson for my shopping. The trip was just about a huge disaster. The first store, Kohls, I decided to get the jeans shopping out of the way. But, 1. there were NO jeans that fit me right  2. it was full of old ladies everywhere that just got in the way and  3. I lost my phone the second time I went in to try on jeans. I left it in there and even though I called all day seeing if it was turned in it was not. Man, I am bad with phones!! I have never kept one alive or with me for more than a two year stretch, it is not cool...

So, after Kohls, in my depressed stupor because I pretty much feel lost without my connections to my friends and family, I went to JC Penny and Ross to look for more jeans and maybe some tops and of course some dresses to take pictures in on my most amazing horse Misha! So, in JC Penny it wasnt that bad. I actually found a lot of jeans that fit right and a few really cute tops! I went into Ross for cheap formals but there was better stuff on ebay so I just passed it up... I did find this cute purse though...

Lunch time!! Oh My Goodness!! Everyone who is reading this needs to stop and do a google search for PitaPits near you! It is amazing and soo healthy and delicious for being fast food! They have amazing vegetarian options and have fluffy but thin pocket pita that they fill with vegetables of your choice and then their amazing greek sauces. Tzatziki (a yogurt and cucumber sauce), Hummus (a chickpea and garlic dip), and Baba Ghanouj (A chickpea dip with garlic, spices and my favorite, eggplant). And of course they have the classic Giro, and for those classic americans out there, a club. So many options, so delicious and FAST! Made hot in front of your eyes! They make them HUGE or normal sized..It depends how much you put on them. Here, have a picture!!

So after an amazing lunch I went to my last stop, Bed Bath and Beyond. I am used to small sections in malls or on a small road but no, this one was HUGE! It was like a warehouse! I mean, they had everything from whisks with legs that you hold to a breathalizor for your keychain! It was amazing! I needed a few new pots and pans and a microwave for school but decided to get those closer to home.

Okay, shopping trip done, headed home trying to get into the left lane so I can make my left turn. Naturally there was a car there but right behind the car was an open spot, so I slow down and turn on my blinker. The car passes and just as I am about to pull into the empty spot the truck that was behind the car who I was trying to turn in front of speeds us, cuts me off and while he is doing all this turns to me and flips me the bird! What? I dont get road rage ever  I am not an angry person, much less an angry driver. I pretty much just turn a blind eye with that kinda stuff but this blantant rudeness to me as a person from this mexican person in a truck that had no right to do this? Why? There was plenty of time for me to get over and turn before he even came up behind me so he would not have to slow down at all. I dont know. I guess it comes with the territory of being in the city.

So I got home and had to make dinner for the family. (cooking for my parents, two older brothers and three younger sisters is not so easy at times but you know, whatever I can do to help mom yah know?) I love mozzerella cheese and I do especially love eggplant so I decided I would try my first dish of Eggplant Parmesan. It went amazing and came out perfect! I added some spices and red peppers to my tomatoes before I processed them and put them on the eggplant and it was so savory. The only people who didnt like it was my two older brothers. It wasnt because of the taste but the "texture." These are the people who call me crazy and dont understand why I have grainy foods (like gritty shortbread cookies and things like that) but they said that the dish was too 'slimy.' Of course they refused to put the bulger I made on it to give it a better texture. (Personally I loved the texture, it reminded me of my mushrooms!!) They said that because I substituted vegetable broth for chicken broth they wouldnt eat it. God, its like they want a heart attack in the next few years or something. Anti-anti-conformists. : p

So, gotta go feed the animals now..fun. But before I go a question to those out there, what is the wierdest thing you have ever eaten? I think that mine would have to be the turkish delicacy, fried turantula...

    Peace, faith and recycling.

  • Personal Downers?

I have been realizing lately that a lot of people are real unhappy with their weight. Not just women, but men and CHILDREN! When I say children I mean little tiny kids in the 3rd-5th grades even. How sad is that? But worse, when they constantly bash their bodies. "Oh my god, I am soo fat! Why must I eat everything? I am such a fat cow!" What is up? That is not how to tell yourself you can and you will make a change. You put yourself down, and you expect to have these inspirational ideas? Wow.

Then, to try to "thinspire" themselves more they obsess over these emaciated girls! They are walking sticks. Not living, but dying with this disease. I admit. I used to be one of them, but once I realized that it was no way to live, that really I was just obsessing about something so superficial I changed. Just like I did when I have up all meat. Just like I do every day when I decide to beat the heat and wake up at o' dark hundred to go on my morning run.

Sorry, I just dont like seeing anyone, no matter how old, young, short or tall doing anything to harm themselves. Call me naive but I really do wish that people could see the real beauty. Themselves.

  • Gay friends and rainbow cupcakes

So, being with friends just about all day yesturday and doing so much I didnt have time to tell yall about all my goings on! I was planning on making my gay friend (who is of course amazing!) rainbow cupcakes at the begining of school. Well, I decided to go in and get registered early so things can just be easier and I can get more done faster. So, I went with all the Juniors. Heedless to say, most of my friends really are lower classman :'( So I was there with Garret (my strictly hetrosexual man-friend) and Luke (hehe gay friend!!) and we came to my house.

Well after talking about our summers and music and new classes that we wont have together, we decided, lets make cupcakes!! So, we made rainbow cupcakes. It was amazing! I only had one egg and for one small batch of cupcakes calls for two and we made huge cupcakes...They were more like muffins. So, I had a few ripening bananas, and every vegan knows that bananas are a very good egg substitute. I mean, why else would banana bread not call for eggs?

So we dyed, and mixed and spooned. It took longer than I thought to cook though. So here are the results! (There is home made buttercream frosting on some of the cupcakes.)

     Rainbow Cupcake Rainbow Cupcake Wrapper

I just thought I might share. I mean, how cute are rainbow cupcakes? You cant eat one and NOT smile on the inside!!

So, about what I ate today. Breakfast was actually pretty simple. A serving of Whole Wheat Wheaties and skim milk with half of a small banana sliced up.

Lunch, I had a six inch Veggie Delight subway sandwich (toasted with american cheese, no sauce) with a bit of home made sun-dried tomato pesto and Baba Ghanouj. It was pretty amazing! And of course I was in the mood for a Root Beer. So, it was pretty good. Try it next time you are at subway. See if you cant find some store bought sun dried pesto. It is actually hard to find Baba Ghanouj store bought, but its not too hard to make... If you like garlic and eggplant like I do :)

  • Not bad today

I spent the day at school registering myself. It wasnt that bad but I realized that I know more Juniors than Seniors. Pretty sad huh? Next year I will be leaving just about all my friends.. :'( Its depressing to think about, so no more thinking!!

Oh, so I saw two movies in the past two days. First, yesturday I saw The Ugly Truth. It was Hysterical! One of the best Romantic Comedys ever...Next to The Princess Bride :p  So I just got home from watching The Orphan. Not a scary movie exactly but SOO suspensfull! Its not even funny. Like my friends (Garret= Best Guy Friend, Luke= Gay Best Friend) and even I reacted like we have never reacted before to this movie. Luke got SOO pissed off at the little girl and I was like rocking in suspense the whole time talking to myself. Garret, master movie detective, couldnt figure out the movie until right before they revealed it. DEFINATELY a go see movie. So, my intake today!!

About Me

  • Lord, bid war's trumpet cease; Fold the world in peace. It cannot be kept with force but only achieved by understanding. I will be the change I want to see in this world. God, grant me the serenety to accept the things I cannot change, the courage to change the things I can; and the wisdom to know the difference.
